Ingredients
  

Lime Glaze:

  • 1/4 cup powdered sugar
  • 1 tsp fresh squeezed lime juice
  • water, added by the tbs

Instructions
 

  • Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat.
  • zest and juice your lime(s) and set aside.
  • In a large bowl, whisk together your almond flour, coconut flour, sugar, salt, and baking soda. Mix in your lime zest.
  • In the same bowl, mix in your egg, lime juice, vanilla extract, and melted butter or coconut oil. Mix until well combined and you have a dough formed.
  • Drop your dough on your prepared baking sheet by the tbs, roll into a ball and slightly flatten.
  • Bake for 10 minutes and allow to cool in the baking sheet for at least 5 minutes before transferring them to a cooling rack.
  • While your cookies cool, make your glaze by adding in your powdered sugar and lime juice in a small bowl, slowly add in water by the tbs and mix until you have a dippable consistency.
  • Once you cookies have completely cooled, dip the tops of them in your glaze and enjoy!
