  • Preheat your oven to 350 degrees F, line an 8x8 pan with parchment paper and set aside.
  • In the bowl of a stand mixer with the paddle attachment or using an electric mixer, add in your oil, both sugars and vanilla extract. Mix on medium speed until combined, about 1 minute.
  • Add the eggs and egg yolk one at a time, mixing after each addition. Let the brownie batter rest for 3 minutes, the repeat by mixing for 30 seconds. Repeat two more times.
  • In a medium mixing bowl whisk together your cocoa powder, flour, salt, baking powder, and espresso powder. Slowly add in your dry ingredients along with the continue mixing for 30 seconds.
  • Pour your batter into the prepared pan and place in your preheated oven for 25 to 35 minutes or until a toothpick inserted into the center comes out almost clean. Remove from the oven and allow to cool in the pan for 30 minutes before slicing and serving. Enjoy!
