  • Preheat your oven to 350 degrees F, and line an 8x8 pan with parchment paper. Set aside.
  • In a small bowl, mix together your cinnamon filling ingredients until smooth and set aside. In a separate bowl, make your crumble topping by mixing all the crumble ingredients together, until a coarse texture remains. Set aside.
  • Prepare the cake in a large mixing bowl, mix together your flour, both sugars, baking soda, and salt. Then mix in your vanilla extract, apple cider vinegar, olive oil, and almond milk. Mix until just combined.
  • Spread half of your cake batter into your prepared pan, spread your cinnamon filling evenly over the batter. Top with the remaining cake batter and evenly sprinkle your streusel topping over the cake batter.
  • Bake for 30-35 minutes or until a toothpick inserter in the middle come out almost clean. Allow your cake to cool completely.
  • Make your optional glaze by mixing together your glaze ingredients and drizzle over top of the cooled cake. Slice into 16 equal pieces and enjoy!
