These Dairy Free Brownies are rich, fudgy, chewy, and thick. Everything you could ever want in a chocolate brownie, plus easy to make with simple ingredients!

Preheat your oven to 350 degrees F, line an 8x8 pan with parchment paper and set aside.

In the bowl of a stand mixer with the paddle attachment or using an electric mixer, add in your oil, both sugars and vanilla extract. Mix on medium speed until combined, about 1 minute.

 Add the eggs and egg yolk one at a time, mixing after each addition. Let the brownie batter rest for 3 minutes, the repeat by mixing for 30 seconds. Repeat two more times.

In a medium mixing bowl whisk together your cocoa powder, flour, salt, baking powder, and espresso powder. Slowly add in your dry ingredients along with the continue mixing for 30 seconds.

Pour your batter into the prepared pan and place in your preheated oven for 25 to 35 minutes or until a toothpick inserted into the center comes out almost clean. Remove from the oven and allow to cool in the pan for 30 minutes before slicing and serving. Enjoy!
