These brownies are seriously to die for, you can’t even tell that they are dairy free! This is my absolute favorite brownie recipe. The crackly top, the fudginess, the chewiness, and those corner pieces – I am drooling over here just thinking about it! Top this with some dairy free vanilla ice cream and now we are talking. The perfect sweet treat or dessert, this recipe freezes well so it is perfect to keep on hand for whenever you need a fudgy chewy brownie. INGREDIENTS YOU NEED
- 3/4 cup coconut oil use canola oil for coconut free
- 3/4 cup sugar
- 1/2 cup brown sugar
- 1 1/2 tsp vanilla extract
- 2 large eggs
- 1 egg yolk
- 2/3 cup cocoa powder
- 1/2 cup all purpose flour
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp espresso powder
Instructions To Make Dairy Free Brownies
- Preheat your oven to 350 degrees F, line an 8×8 pan with parchment paper and set aside.
- In the bowl of a stand mixer with the paddle attachment or using an electric mixer, add in your oil, both sugars and vanilla extract. Mix on medium speed until combined, about 1 minute.
- Add the eggs and egg yolk one at a time, mixing after each addition. Let the brownie batter rest for 3 minutes, the repeat by mixing for 30 seconds. Repeat two more times.
- In a medium mixing bowl whisk together your cocoa powder, flour, salt, baking powder, and espresso powder. Slowly add in your dry ingredients along with the continue mixing for 30 seconds.
- Pour your batter into the prepared pan and place in your preheated oven for 25 to 35 minutes or until a toothpick inserted into the center comes out almost clean. Remove from the oven and allow to cool in the pan for 30 minutes before slicing and serving. Enjoy!
