If you are as obsessed with bananas as I am, you will also LOVE these healthy recipes: Banana pudding cheesecake and banana muffins. This is seriously one of my favorite recipes – you really cant go wrong with a banana pudding that is made with REAL bananas! This no bake recipe is delicious served warm or cold, you can’t go wrong either way.

INGREDIENTS YOU NEED FOR BANANA PUDDING

  • 2 bananas, mashed
  • 1 1/4 cup almond milk
  • 2 tbs of monk fruit or stevia
  • 1 1/2 tbs tapioca flour
  • 1/4 tsp vanilla extract
  • optional: 1/8 tsp turmeric for color

Instructions How To Make Dairy Free Banana Pudding

  1. In a small pot over medium heat, combine your mashed bananas, sweetener of choice, optional turmeric, and 1 cup of almond milk, mix until well incorporated.
  2. In a small bowl or measuring cup whisk the remaining 1/4 cup of almond milk with your tapioca flour and set aside until your banana mixture is warm.
  3. Once banana mixture is warm, whisk in your almond milk and tapioca flour mixture.
  4. Continue to cook on low heat, whisking occasionally until thickens. Turn off your heat and stir in your vanilla extract. If you would like a smoother texture use a hand blender.
  5. Serve warm or refrigerate once cooled and enjoy for later! My favorite is chilled in the fridge.
