This Easy Sugar Free Strawberry Pie can make any day feel like a sunny summer afternoon. It’s packed with juicy strawberries and topped with a sweet whipped cream that will make your mouth water.

Ok, so I know that you have to bake the crust – but you don’t have to bake the filling. In my opinion, no bake means that you don’t have to bake the entire pie. But, if you don’t want to turn on your oven at all you can buy a premade crust and viola! No turning on your oven whatsoever. I am currently obsessed with these sugar gluten free pies: Strawberry Cream Pie and Key Lime Pie and of course, this strawberry pie – I can’t get enough! This easy low calorie dessert will please any crowd and they will never believe that it had zero added sugar! Let’s get to impressing your friends and family:

INGREDIENTS YOU NEED

Graham Cracker Pie Crust:

  • 1 1/2 cups keto graham cracker crumbs (or regular if you don’t want keto)
  • 5 tbs unsalted butter, melted

Strawberry Pie Filling:

  • 2 pounds strawberries
  • 1 cup monk fruit or granulated sugar of choice
  • 2 tbs xanthan gum
  • 3/4 cup water

Whipped topping:

  • 1/2 cup heavy whipping cream
  • 2 tbs powdered monk fruit or powdered sweetener of choice
  • 1 tsp vanilla extract

Instructions To Make Sugar Free Strawberry Pie

  1. Preheat your oven to 350 degrees F and spray a 9 inch pie dish with non stick spray. Mix together your graham crackers crumbs and butter until there are no dry crumbs left. Spread evenly in your pie dish and bake for 8 minutes. Set aside to cool completely.
  2. Slice half of your strawberries and arrange them in your baked pastry shell. Mash remaining berries with monk fruit and place in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
  3. In a small bowl, whisk together xanthan gum and water. Gradually stir mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 5-8 minutes, stirring constantly. Pour mixture over berries in pastry shell.
  4. Chill for several hours before serving. In a small bowl, whip your cream, powdered monk fruit, and vanilla until soft peaks form. Place a dollop on top of each slice and enjoy!
