A Keto Key Lime Pie is a delicious dessert that offers a flavorful twist on the classic key lime pie. It is a low-carb, high-fat alternative that caters to individuals following the ketogenic diet. The pie is typically made with a crust that is grain-free and sugar-free, using alternative flours such as almond flour or coconut flour. The filling is creamy and tangy, thanks to the use of key lime juice and natural sweeteners like stevia or erythritol. This Keto version of the pie allows you to indulge in a delightful treat while maintaining a ketogenic lifestyle.

INGREDIENTS YOU NEED

Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup ground flax meal
  • 3 tbsp monk fruit or granulated sweetener of choice
  • 1/2 cup unsated butter melted

Pie Filling:

  • 1 cup cream cheese
  • 1 cup sugar free sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 cup heavy cream
  • Optional: 1-2 tbs monk fruit, or granulated sweetener of choice

Instructions To Make Keto Key Lime Pie

  1. Preheat your oven to 340 degrees F, line a 9 inch pie dish with non stick spray and set aside.
  2. Mix all of your crust ingredients together until well incorporated and spread evenly in your prepared pie dish. Bake crust for 12 minutes and set aside to completely cool.
  3. In a large mixing bowl whisk your cream cheese until smooth and then whisk in your lime juice and sugar free condensed milk.
  4. Whisk in your heavy cream and whisk until smooth and creamy. Add in your extra granulated sweetener if you would like pie a bit sweeter.
  5. Pour your pie filling in your cooled crust and transfer into your fridge for at least 4 hours, but overnight is preferred.
  6. Once your pie has set in the fridge, make your topping by whipping your cream and sweetener with a whisk and spread over top of your pie. Top with garnish if desired cut into equal pieces and enjoy!
