INGREDIENTS YOU NEED
Crust:
- 1 1/2 cups almond flour
- 1/4 cup ground flax meal
- 3 tbsp monk fruit or granulated sweetener of choice
- 1/2 cup unsated butter melted
Pie Filling:
- 1 cup cream cheese
- 1 cup sugar free sweetened condensed milk
- 1/2 cup fresh lime juice
- 1 cup heavy cream
- Optional: 1-2 tbs monk fruit, or granulated sweetener of choice
Topping:
- 1 cup heavy cream
- 3-4 tbsp powdered monk fruit or powdered sweetener of choice
- Optional: sliced limes, for garnish
Instructions To Make Keto Key Lime Pie
- Preheat your oven to 340 degrees F, line a 9 inch pie dish with non stick spray and set aside.
- Mix all of your crust ingredients together until well incorporated and spread evenly in your prepared pie dish. Bake crust for 12 minutes and set aside to completely cool.
- In a large mixing bowl whisk your cream cheese until smooth and then whisk in your lime juice and sugar free condensed milk.
- Whisk in your heavy cream and whisk until smooth and creamy. Add in your extra granulated sweetener if you would like pie a bit sweeter.
- Pour your pie filling in your cooled crust and transfer into your fridge for at least 4 hours, but overnight is preferred.
- Once your pie has set in the fridge, make your topping by whipping your cream and sweetener with a whisk and spread over top of your pie. Top with garnish if desired cut into equal pieces and enjoy!
