This recipe is so quick and easy, you won’t believe it! This recipe is completely delicious and I have made these blondies multiple times for non vegan friends and they can’t believe that this recipe is vegan! A total win in my books, and honestly anything that is vegan and made without chickpeas is a huge win in my books. I have been told that by some vegan friends and followers as well, they all appreciate a vegan dessert that is NOT made any chickpeas, or beans, or anything that does not typically classify and a ‘dessert’. Let’s get to makin’ some amazing blondies!

INGREDIENTS YOU NEED
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsweetened apple sauce
- 6 tbsp vegan butter room temperature
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 tsp vanilla extract
- 1 1/2 cups vegan chocolate chips

Instructions To Make Vegan Blondies
- Preheat your oven to 350 degrees F and line an 8×8 inch square pan with parchment paper. Set aside.
- In a large mixing bowl, whisk together your flour, baking powder, and salt until combined. In separate bowl, add your sugars and vegan butter. Using a hand or stand mixer, cream together until combined.
- Add your butter mixture to your flour mixture. Mix in your vanilla extract and apple sauce. Mix together until just combined. Fold in your chocolate chips.
- Transfer your batter into your prepared pan. Bake for 15-17 minutes, until the edges are just starting to brown.

These are delicious! I’ve made them several times and realized I hadn’t made a comment yet. They really are so easy. I adjust the chocolate amount to just 1 cup, only because I like having more bites of the buttery/sugary base. Otherwise, I make them as is with a flax egg. Great recipe!
