These are so quick and easy to make, you can have them on hand all of the time when that sweet craving kicks in (which for me, is ALWAYS).  You won’t be able to eat just one. These are crunchy, sweet, and AMAZING! I love me some candied nuts and this combination of sweet cinnamon and vanilla makes these the ultimate sweet snack. Mix it in with your popcorn for a sweet & salty snack, add them to a salad, give as a gift, add to your ice cream – or eat them completely on their own, you really can’t go wrong! Even chop them up and add them to some of your other baking.

INGREDIENTS YOU NEED TO MAKE KETO CANDIED PECANS

  • 2.5 cups raw pecans
  • 1/4 cup water
  • 3/4 cup monk fruit
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions To Make Keto Candied Pecans

  1. Prepare a baking sheet with parchment paper and set aside. (You’ll transfer the nuts to the parchment paper to cool)
  2. In a medium skillet over medium heat, add the water, monk fruit, vanilla, and cinnamon.
  3. Once combined and bubbling, add the pecans and stir until all the pecans are coated in the candy mixture.
  4. gently stir until the candy mixture begins to bubble again.
  5. Let the pecans cook in the candy mixture for 5-10 minutes stirring occasionally to evenly coat the nuts and prevent sticking.
  6. Carefully transfer your candied pecans to the parchment paper to cool for about 45 minutes. Make sure the nuts are spread out in a single layer. Enjoy!
