Banana Cake:
  • 3 large very ripe bananas
  • 1/4 cup unsalted butter melted
  • 1/4 cup vegetable or canola oil
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • 2 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
  • 1/2 tsp salt
Peanut Butter Frosting:
  • 4 oz cream cheese room temperature
  • 1/4 cup unsalted butter room temperature
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions To Make Banana Peanut Butter Cake

Banana Cake:
  • Preheat your oven to 350 degrees F. Line an 8-inch pan with parchment paper. Mash all 3 of your bananas in a large bowl; set aside.
  • In a separate bowl whisk together your butter, oil, granulated sugar, and brown sugar until smooth. Beat in eggs, one at a time.
  • Whisk in the sour cream and vanilla until smooth. Then whisk in your baking powder and salt.
  • Fold in flour until no streaks remain. Stir in mashed bananas. Do not overmix.
  • Pour the batter into prepared pan. Bake 40 to 45 minutes or until a toothpick inserted into the center of your cake comes out almost clean. Allow cake to cool completely before frosting.
