Banana Cake:
- Preheat your oven to 350 degrees F. Line an 8-inch pan with parchment paper. Mash all 3 of your bananas in a large bowl; set aside.
- In a separate bowl whisk together your butter, oil, granulated sugar, and brown sugar until smooth. Beat in eggs, one at a time.
- Whisk in the sour cream and vanilla until smooth. Then whisk in your baking powder and salt.
- Fold in flour until no streaks remain. Stir in mashed bananas. Do not overmix.
- Pour the batter into prepared pan. Bake 40 to 45 minutes or until a toothpick inserted into the center of your cake comes out almost clean. Allow cake to cool completely before frosting.
Peanut Butter Frosting:
- Using an electric mixer, beat your cream cheese, butter, vanilla extract and peanut butter until smooth.
- Slowly add in your powdered sugar, continuing to whisk until all powdered sugar is incorporated and your frosting is smooth.
- Evenly spread your frosting on to your cake, top with chopped graham crackers if desired. Slice and enjoy!
