Mix together your vegan greek yogurt, baking soda, sugar, vanilla extract, and salt until smooth and combined.

Transfer your mascarpone recipe into a double layered cheesecloth, and place that in a colander over top of a bowl.

Place a small weight on top of the cheesecloth. Place in your fridge for 12 hours to drain. Enjoy!
