Gluten Free Dairy Free Banana Bread

Banana Bread will always be my favorite comfort food, and it is even better when it is gluten free and dairy free! This sugar free recipe is sure to hit the spot.

Preheat your oven to 350 degrees F. Line a small 8x4 loaf pan with parchment paper, leaving an overhang on each side of the pan. Lightly spray the lined pan with non-stick spray.

In a medium bowl, whisk together your eggs, mashed bananas, vanilla, and monk fruit.

Gradually whisk in your almond flour, cinnamon, salt, and baking soda. Whisk until JUST combined.

Transfer your banana bread batter evenly into your prepared loaf pan.

Bake your banana bread for 40-50 minutes, or until a toothpick inserted in its center comes out clean.

Allow to cool in the pan for about 20 minutes. Using the excess parchment paper as handles, carefully remove your banana bread from the pan and transfer it to a wire cooling rack. Carefully remove the parchment, to allow air to circulate.

Once bread has cooled completely, slice and enjoy!
