Gluten Free Sugar Free Shortbread Cookies

These Gluten Free Sugar Free Shortbread Cookies are perfect for any occasion and very easy to make! Tender, lightly sweet, and buttery. Take them up a notch by dipping in chocolate!

Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, set aside.

In a large mixing bowl, add your butter and sweetener. Beat until creamy - it is easiest to use a stand or hand mixer.

Add in your vanilla and eggs, one at a time until smooth. Gently fold in your almond flour and salt, mix until combined.

Using a large cookie scoop, form 12-15 dough balls and place on your prepared baking sheet. Press each ball down into a cookie shape and create holes in the middle of your cookie with the prongs of a fork.

Bake for 17-20 minutes, or until the edges are just starting to turn a golden brown. Remove from oven and allow to cool completely and enjoy!
