Italian Lemon Cake is a heavenly dessert that combines the refreshing zest of lemons with a moist and tender cake, creating a delightful and uplifting culinary experience.

In a medium mixing bowl, whisk together your flour, baking soda, and salt. Set aside.

Using a separate bowl of a stand mixer or electric hand mixer, beat your eggs and sugar until creamy, about 4 minutes.

Slowly drizzle in your olive oil. Then your milk, lemon juice and lemon zest.

Mix in your flour mixture until just combined, do not overmix!

Evenly spread in to your prepared cake pan and bake for 40-45 minutes or until a toothpick inserted to the middle comes out almost clean, it should have some crumbs on it.

Allow to cool in cake pan for at least 5 minutes before transferring to a cooling rack to cool completely. Sprinkle powdered sugar on top, serve and enjoy!
