- 2 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 3 large eggs room temperature
- 1 cup sugar
- 3/4 cup olive oil virgin or extra virgin
- 2/3 cup milk of choice
- zest from one lemon
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 1/4 cup powdered sugar for sprinkling
Instructions To Make Italian Lemon Cake
- Preheat your oven to 350 degrees F and spray a 8 inch cake pan with non stick spray and line bottom with parchment paper, set aside.
- In a medium mixing bowl, whisk together your flour, baking powder, and salt. Set aside.
- Using a separate bowl of a stand mixer or electric hand mixer, beat your eggs and sugar until creamy, about 4 minutes.
- Slowly drizzle in your olive oil. Then your milk, lemon juice, vanilla extract and lemon zest.
- Mix in your flour mixture until just combined, do not overmix!
- Evenly spread in to your prepared cake pan and bake for 40-45 minutes or until a toothpick inserted to the middle comes out almost clean, it should have some crumbs on it.
- Allow to cool in cake pan for at least 5 minutes before transferring to a cooling rack to cool completely. Sprinkle powdered sugar on top, serve and enjoy!
