Instructions To Make Italian Lemon Cake

  1. Preheat your oven to 350 degrees F and spray a 8 inch cake pan with non stick spray and line bottom with parchment paper, set aside.
  2. In a medium mixing bowl, whisk together your flour, baking powder, and salt. Set aside.
  3. Using a separate bowl of a stand mixer or electric hand mixer, beat your eggs and sugar until creamy, about 4 minutes.
  4. Slowly drizzle in your olive oil. Then your milk, lemon juice, vanilla extract and lemon zest.
  5. Mix in your flour mixture until just combined, do not overmix!
  6. Evenly spread in to your prepared cake pan and bake for 40-45 minutes or until a toothpick inserted to the middle comes out almost clean, it should have some crumbs on it.
  7. Allow to cool in cake pan for at least 5 minutes before transferring to a cooling rack to cool completely. Sprinkle powdered sugar on top, serve and enjoy!
