Keto Peanut Butter Cookies are delicious low-carb treats made with only 3 ingredients, perfect for those following a ketogenic diet.

- 1 cup natural smooth peanut butter
- 1 cup monk fruit or granulated sweetener of choice
- 1 large egg
Preheat oven to 325 degrees F, line a large baking sheet with parchment paper and set aside.
In a large bowl, mix together your peanut butter, sweetener, and egg until very well combined.
Scoop out a tbs of dough and roll it into a ball. Place the cookie balls onto your prepared baking sheet.
Flatten your peanut butter cookie balls by pressing a fork down on top of them, then press it down again make a criss-cross pattern.
Bake for 10-12 minutes or until the edges are JUST starting to brown.
Remove from the oven and allow to cool for at least 10 minutes before removing them from baking sheet, enjoy!
