Ingredients
  

  • 1 1/3 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 3 large overripe bananas mashed
  • 2 large eggs room temperature
  • 1/2 cup sour cream
  • 1 1/2 tsp vanilla extract
  • 1 cup chocolate chunks it is best to use chopped chocolate bars

Instructions
 

  • Preheat your oven to 325 degrees F and spray a 9x5inch loaf pan with non stick spray, set aside.
  • In a bowl, whisk together your flour, baking soda, and salt.
  • In a separate bowl using an electric mixer, whisk together your melted butter, brown sugar, and sugar for about 2 minutes.
  • Mix in your mashed bananas, eggs, sour cream, and vanilla extract until well incorporated.
  • Switching to mixing with a rubber spatula, mix in your flour mixture until just incorporated - do not overmix. Fold in your chocolate chunks.
  • Evenly pour your batter in to your prepared loaf pan, top with more chocolate chunks if desired. Bake for 60-65 minutes or until a toothpick inserted to the middle comes out almost clean.
  • Allow to cool in your loaf pan for at least 20 minutes before transferring to a wire cooling rack to cool completely. Slice and enjoy!
