Brownie Base:
- Preheat your oven to 325 degrees F. Line a 8x8 inch pan with foil or parchment paper and spray with nonstick cooking spray.
- In a microwave safe bowl, add your butter and sugar. Microwave for about 1 minute, or until the butter is melted. Whisk in the eggs, egg yolk, and vanilla. Stir in the oil and cocoa powder.
- With a rubber spatula, stir in your flour, baking soda, cornstarch, and salt until combined.
- Spread the brownie batter evenly into the prepared pan.
- Bake for 15 minutes.
Banana Pudding Layer:
- While your brownie base is baking, add your cream cheese and banana pudding to a bowl and whisk together with an electric mixer until smooth and incorporated.
- Add your eggs one by one. After adding each egg, beat mixture on low speed until egg is just incorporated before adding next egg. Do not overmix.
- When your brownie is out of the oven, evenly spread your pudding mixture on top of brownie layer.
- If using, evenly place as many vanilla wafers as you would like on top of banana pudding layer.
- Return your baking dish to the oven. Bake for 20 minutes or until the banana pudding layer is only slightly jiggly.
- Remove from oven, allow to cool, slice and enjoy!
