Ingredients
  

  • 1 large banana overripe
  • 2/3 cup rolled oats gluten free if needed
  • 2 large eggs

Method
 

  1. Place all of your ingredient in to a blender, blend until fully combined. Allow your batter to sit for 5 minutes to thicken.
  2. While your batter rests, heat a large nonstick pan over medium heat. Lightly butter or oil the pan.
  3. Pour about 1/4 of batter onto your hot pan. Cook for about 1 – 2 minutes until the edges are crisp and firm up. Bubbles will not form on the tops of these pancakes. To check if they are ready to flip, gently lift with a spatula to see if bottoms are browning.
  4. Flip and cook in the other side, repeat with any remaining batter and enjoy!
