Line a baking sheet with parchment paper or baking mat. Preheat the oven to 350 degrees F.
Place almond flour, baking soda, sugar, ground cinnamon, ground ginger, allspice and salt in the bowl of a stand mixer with the paddle attachment. Slowly mix until combined.
Add in the butter, molasses, egg, and vanilla and mix until a dough forms. This takes about 20-30 seconds.
Place about a 1/4 cup of monk fruit in a small bowl. Measure 2 tablespoons of dough per cookie, roll into a ball and dust in your sugar, and arrange them 2 inches apart from each other on the baking sheet.
Gently press on each cookie to slightly flatten.
Bake in the oven for 10-12 minutes. Allow it to cool on the sheet pan for 15 minutes before transferring to a cooling rack. Enjoy!
