  • Line a baking sheet with parchment paper or baking mat. Preheat the oven to 350 degrees F.
  • Place almond flour, baking soda, sugar, ground cinnamon, ground ginger, allspice and salt in the bowl of a stand mixer with the paddle attachment. Slowly mix until combined.
  • Add in the butter, molasses, egg, and vanilla and mix until a dough forms. This takes about 20-30 seconds.
  • Place about a 1/4 cup of monk fruit in a small bowl. Measure 2 tablespoons of dough per cookie, roll into a ball and dust in your sugar, and arrange them 2 inches apart from each other on the baking sheet.
  • Gently press on each cookie to slightly flatten.
  • Bake in the oven for 10-12 minutes. Allow it to cool on the sheet pan for 15 minutes before transferring to a cooling rack. Enjoy!
