- 2 cups almond flour
- 1/2 tsp baking soda
- 1/2 cup sugar, plus more for rolling dough in
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/4 tsp allspice
- 1/4 tsp salt
- 2 tbsp unsalted butter room temperature
- 3 tbsp fancy molasses
- 1 large egg
- 1 tsp vanilla extract
Instructions To Make Gluten Free Molasses Cookies
- Line a baking sheet with parchment paper or baking mat. Preheat the oven to 350 degrees F.
- Place almond flour, baking soda, monk fruit, ground cinnamon, ground ginger, allspice and salt in the bowl of a stand mixer with the paddle attachment. Slowly mix until combined.
- Add in the butter, molasses, egg, and vanilla and mix until a dough forms. This takes about 20-30 seconds.
- Place about a 1/4 cup of monk fruit in a small bowl. Measure 2 tablespoons of dough per cookie, roll into a ball and dust in your monk fruit, and arrange them 2 inches apart from each other on the baking sheet.
- Gently press on each cookie to slightly flatten.
- Bake in the oven for 10-12 minutes. Allow it to cool on the sheet pan for 15 minutes before transferring to a cooling rack. Enjoy!
