INGREDIENTS YOU NEED

  • 2 cups almond flour
  • 1/2 tsp baking soda
  • 1/2 cup sugar, plus more for rolling dough in
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp allspice
  • 1/4 tsp salt
  • 2 tbsp unsalted butter room temperature
  • 3 tbsp fancy molasses
  • 1 large egg
  • 1 tsp vanilla extract

Instructions To Make Gluten Free Molasses Cookies

  1. Line a baking sheet with parchment paper or baking mat. Preheat the oven to 350 degrees F.
  2. Place almond flour, baking soda, monk fruit, ground cinnamon, ground ginger, allspice and salt in the bowl of a stand mixer with the paddle attachment. Slowly mix until combined.
  3. Add in the butter, molasses, egg, and vanilla and mix until a dough forms. This takes about 20-30 seconds.
  4. Place about a 1/4 cup of monk fruit in a small bowl. Measure 2 tablespoons of dough per cookie, roll into a ball and dust in your monk fruit, and arrange them 2 inches apart from each other on the baking sheet.
  5. Gently press on each cookie to slightly flatten.
  6. Bake in the oven for 10-12 minutes. Allow it to cool on the sheet pan for 15 minutes before transferring to a cooling rack. Enjoy!
