This is actually my very first time decorating a cookie, and considering I didn’t even have any piping materials I think I totally killed it! I just put my icing mix into a baggie and cut the corner off of it – so no worries if you don’t having any piping stuff at home! My house smelled absolutely amazing and Christmas-y when I made these, so of course I turned on some Christmas music. These cookies freeze well too if you want to make them ahead! You can skip the food coloring if you would like, the icing is naturally white so you can decorate with that. Or skip the icing all together, these cookies are amazing without it too!
INGREDIENTS YOU NEED TO MAKE KETO GINGERBREAD COOKIES
- 1/2 cup unsalted butter, room temperature
- 3/4 cup golden monk fruit
- 2 tsp fancy molasses
- 2 eggs, room temperature
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 tsp baking soda
- 1 tbs ground ginger
- 1 tbs cinnamon
- 1/8 tsp nutmeg
- 1/4 tsp salt
Icing:
- 1/2 cup powdered monk fruit
- 1 1/2 tbs heavy cream
- almond milk, as needed

How To Make Keto Gingerbread Cookies
- Preheat oven to 350 degrees F, line a large baking sheet with parchment paper.
- In a large bowl, mix together your butter, monk fruit, molasses, and eggs.
- Next add in your almond flour, coconut flour, baking soda, ginger, cinnamon, and salt in a separate bowl and whisk until combined. Add dry mixture to your butter mixture and continue to mix until well combined. Bring into a dough ball and let rest for a few minutes.
- Place dough between 2 sheets of parchment paper and roll out your dough so that it is approximately 1/4″ thick.
- Using cookie cutters of your choice to cut the dough out then place your shapes on your prepared baking sheet. Bake for 10-12 minutes.
- Allow your cookies to cool on the baking sheet for at least 5 minutes before transferring to a cooling rack to completely cool.
- Icing: Ensure that your cookies are completely cool before icing. Combine all of your ingredients and mix until smooth, put in a piping bag and decorate as desired! Enjoy!
