I still cannot believe these have 0 added sugar or are gluten free! Get into the festive spirit as your house fills with the aroma of fresh brownies and peppermint, it’s hard to not eat the entire batch in one sitting!  These brownies are gluten free, keto, and have zero sugar. I know, it sounds like all the good stuff was taken out of brownies right? WRONG. These are absolutely DELICIOUS and have the perfect brownie texture! These DID NOT last long in my house at all!

INGREDIENTS YOU NEED

  • 1/2 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 3/4 cup monk fruit
  • 3 large eggs
  • 3/4 cup unsalted butter
  • 1 tsp peppermint extract
  • 1/2 cup sugar free chocolate chips

Topping:

  • 3 tbs heavy cream
  • 1/8 tsp peppermint extract
  • 1 tbs cocoa powder
  • 1/4 cup powdered monk fruit
  • Optional decoration: crushed candy canes

How To Make Keto Peppermint Brownies

  1. Preheat the oven to 350 degrees F. Line an 8x8inch pan with parchment paper and set aside.
  2. In a mixing bowl, combine all your dry ingredients (expect chocolate chips) and mix until combined.
  3. Combine butter with half the chocolate chips and peppermint extract, melt in a saucepan over medium heat until warm and melted.
  4. In a separate large bowl, add your eggs and using an electric mixer, beat the eggs until slightly frothy.
  5. Slowly add the chocolate and butter mixture to the eggs while mixing.
  6. Add the dry ingredients slowly, and continue mixing until you are left with a thick, glossy brownie batter. Fold in your remaining chocolate chips.
  7. Transfer your brownie batter into an 8x8inch pan covered with parchment paper. Bake the brownies for 18-25 minutes, or until a skewer comes out just about clean from the center.
  8. Remove from the oven and allow the brownies to cool in the pan for 20 minutes, before carefully transferring to a wire rack to cool completely.
  9. Once completely cooled, make your topping by combining all of your topping ingredients (except candy canes) by mixing with an electric whisk until fluffy and smooth.
  10. Spread evenly over cooled brownies and top with crushed candy canes if desired. Enjoy!
