This Easy Sugar Free Strawberry Pie can make any day feel like a sunny summer afternoon. It's packed with juicy strawberries and topped with a sweet whipped cream that will make your mouth water.
Preheat your oven to 350 degrees F and spray a 9 inch pie dish with non stick spray. Mix together your graham crackers crumbs and butter until there are no dry crumbs left. Spread evenly in your pie dish and bake for 8 minutes. Set aside to cool completley.
Slice half of your strawberries and arrange them in your baked pastry shell. Mash remaining berries with monk fruit and place in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
In a small bowl, whisk together xanthan gum and water. Gradually stir mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 5-8 minutes, stirring constantly. Pour mixture over berries in pastry shell.
Chill for several hours before serving. In a small bowl, whip your cream, powdered monk fruit, and vanilla until soft peaks form. Place a dollop on top of each slice and enjoy!
