These Gluten Free Shortbread Cookies are perfect for any occasion and very easy to make! Tender, lightly sweet, and buttery. Take them up a notch by dipping in chocolate!
Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, set aside.
In a large mixing bowl, add your butter and sugar. Beat until creamy - it is easiest to use a stand or hand mixer.
Add in your vanilla and eggs, one at a time until smooth. Gently fold in your almond flour and salt, mix until combined.
Using a large cookie scoop, form 12-15 dough balls and place on your prepared baking sheet. Press each ball down into a cookie shape and create holes in the middle of your cookie with the prongs of a fork.
Bake for 17-20 minutes, or until the edges are just starting to turn a golden brown. Remove from oven and allow to cool completely and enjoy!
