Start preheating your waffle maker.
In a large bowl using a stand or hand mixer, whisk together your eggs, coconut oil, vanilla, and apple cider vinegar until well incorporated.
Add in your almond flour, sugar and baking powder and continue to whisk until everything is well incorporated and smooth.
Coat your waffle maker with non-stick spray and cook your waffles according to your waffle makers instructions.
