  • Preheat your oven to 350 degrees F. Line a small 8x4 loaf pan with parchment paper, leaving an overhang on each side of the pan. Lightly spray the lined pan with non-stick spray.
  • In a medium bowl, whisk together your eggs, mashed bananas, vanilla, and sugar.
  • Gradually whisk in your almond flour, cinnamon, salt, and baking soda. Whisk until JUST combined.
  • Transfer your banana bread batter evenly into your prepared loaf pan.
  • Bake your banana bread for 40-50 minutes, or until a toothpick inserted in its center comes out clean.
  • Allow to cool in the pan for about 20 minutes. Using the excess parchment paper as handles, carefully remove your banana bread from the pan and transfer it to a wire cooling rack. Carefully remove the parchment, to allow air to circulate.
  • Once bread has cooled completely, slice and enjoy!
