  • In the bowl of a stand mixer or a large bowl with an electric mixer, cream together your coconut oil and both sugars for about 2 minutes.
  • Add in your eggs and vanilla, mix until incorporated.
  • Mix in your almond flour, coconut flour, and baking soda until combined.
  • Fold in your chocolate chips.
  • Cover your bowl and place in your fridge to chill for 4 hours, up to overnight.
  • Once ready to bake, preheat your oven to 350 degrees F. Line a large baking sheet with parchment paper.
  • When your oven is ready, scoop your cookie dough with a cookie scoop - don't place too close together.
  • Bake for 9 to 12 minutes. Allow to cool on your pan for 10 minutes to allow to the cookies to harden a bit. Transfer to a wire rack to cool completely and enjoy!
