Method
- Preheat your oven to 350 degrees F. Spray a 8.5 inch loaf pan with non stick spray and line with parchment paper, set aside.
- Place your peeled bananas in a medium sized bowl and mash with a fork until smooth.
- Add in your eggs and whisk until combined.
- Next, mix in your brown sugar and flour. Mix until just combined, do not overmix!
- Pour your batter in to your prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the middle of the loaf comes out almost clean. There should be a few crumbs on it.
- Allow to cool, slice and enjoy!

*If you do not have self rising flour, you can use 1 1/2 cups all purpose flour, 1 tsp baking powder, 1/4 tsp baking soda.
** You can also use 1:1 gluten free flour with xanthan gum. Just add 1 tsp baking power and 1/4 tsp baking soda.
