Preheat your oven to 350 degrees F and line a 24 mini muffin tin with mini muffin cups.
Peel and grate your apple and carrot. Mash your banana.
In a large bowl mix together your apple, carrot, banana, eggs, vanilla, and vegetable/canola oil.
In a separate bowl whisk together your flour, baking powder, and cinnamon.
Add dry ingredients to wet ingredients and mix until just combined. Do not overmix.
Fill mini muffin tin with 1 heaping tablespoon per muffin.
Bake for 13 minutes or until toothpick comes out almost clean. Allow to cool and enjoy!
