  3. In a large bowl mix together your apple, carrot, banana, eggs, vanilla, and vegetable/canola oil.
  4. In a separate bowl whisk together your flour, baking powder, and cinnamon.
  5. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix.
  6. Fill mini muffin tin with 1 heaping tablespoon per muffin.
  7. Bake for 13 minutes or until toothpick comes out almost clean. Allow to cool and enjoy!
