- 1/2 cup chocolate chips
- 1/3 cup canola or vegetable oil
- 2 large eggs room temperature
- 1/3 cup sugar
- 2/3 cup brown sugar
- 1 cup milk of choice preferably full fat
- 1 3/4 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
- 1/2 cup cocoa powder
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup chocolate chunks

Instructions To Make Triple Chocolate Muffins
- Preheat your oven to 400 degrees F and line a 12 muffin tin with muffin liners, set aside.
- In 30 second increments, melt your butter and chocolate chips in a microwave safe bowl, stirring in between every increment. Continue until fully melted.
- In a large bowl whisk your oil, eggs, sugar, brown sugar, and milk until smooth. Pour your melted chocolate and butter mix into the bowl and and whisk until combined.
- Add your flour, cocoa powder, baking powder, and salt to the bowl. Whisk until just combined, do not overmix.
- Fold in your chocolate chips and chunks into the batter.
- Evenly divide your batter in your prepared liners, the liners should be about ¾ full.
- Bake your muffins at 400 for 5 minutes before lowering the heat to 350 degrees F (without opening the oven door) and bake for 10-13 minutes or a toothpick inserted into the middle comes out almost clean, there should be some crumbs.
- Allow to cool for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
