Deliciously easy apple crumble muffins topped with an almond flour cinnamon crumble. These muffins are so moist you would not believe that they are gluten free, sugar free, or low carb!

When the Autumn/Fall season rolls around these babies are in high demand! Don’t worry though because you can also enjoy these low carb gluten free apple crumble muffins all year round! I can’t wait for your house to smell with the most amazing aroma of cinnamon and apples, honestly it had my dancing around the kitchen all excited to eat these muffins! I mean, just LOOK at that delicious crumble…. are you looking? I can’t stop looking. Almond flour is the perfect base for these muffins and the rest of the ingredients ensure that stay nice and moist!

INGREDIENTS YOU NEED TO MAKE APPLE CRUMBLE MUFFINS

  • 2 1/2 cups almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup monk fruit or granulated sweetener of choice
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/3 cup unsalted butter, melted
  • 6 tbsp unsweetened almond milk, or milk of choice
  • 2 peeled and diced granny smith apples
  • Streusel Topping:
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 cup walnuts or pecans
  • 1 1/2 tsp ground cinnamon
  • 3 tbsp monk fruit or granulated sweetener of choice
  • 1/4 cup unsalted butter, melted

Instructions To Make Gluten Free Apple Crumble Muffins

  1. Preheat your oven to 350 degrees F and line a 12 count muffin tin with muffin liners. Set aside.
  2. Prepare your crumble topping by mixing all of your streusel ingredients until crumbly texture is achieved, set aside.
  3. In a large bowl whisk together your almond flour, baking powder, salt, and sweetener until combined.
  4. In a separate medium bowl mix together your eggs, vanilla, butter, and almond milk. Pour into your almond flour mixture and mix until no clumps remain.
  5. Mix in your diced apples.
  6. Scoop batter into your prepared muffin liners until almost to the top of the liner, top each unbaked muffin with your crumble.
  7. Bake for 22-25 minutes or until a toothpick inserted to the middle of your apple muffin comes out clean.
  8. Allow to cool for 10-15 minutes before transferring to a wire cooling rack to cool completely and enjoy!
