- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/3 cup unsalted butter melted

- 2 granny smith apples peeled and diced
- Streusel Topping:
- 1/2 cup almond flour
- 2 tbsp coconut flour
- 1/2 cup walnuts or pecans
- 1 1/2 tsp ground cinnamon
- 3 tbsp sugar
- 1/4 cup unsalted butter melted

Instructions To Make Gluten Free Apple Muffins
- Preheat your oven to 350 degrees F and line a 12 count muffin tin with muffin liners. Set aside.
- Prepare your crumble topping by mixing all of your streusel ingredients until crumbly texture is achieved, set aside.
- In a large bowl whisk together your almond flour, baking powder, salt, and sweetener until combined.
- In a separate medium bowl mix together your eggs, vanilla, butter, and almond milk. Pour into your almond flour mixture and mix until no clumps remain.
- Mix in your diced apples.
- Scoop batter into your prepared muffin liners until almost to the top of the liner, top each unbaked muffin with your crumble.
- Bake for 22-25 minutes or until a toothpick inserted to the middle of your apple muffin comes out clean.
- Allow to cool for 10-15 minutes before transferring to a wire cooling rack to cool completely and enjoy!
