Classic soft and fluffy Red Velvet Muffins with a surprise delicious cream cheese middle, easy to make and easy to eat!
Classic red velvet chocolate and cream cheese flavor wrapped into one delicious muffin package. The surprise filling in these muffins is always a huge crowd pleaser, because you can’t have red velvet without cream cheese! I love to make these around Valentines day or Christmas because I just find red velvet goes so well with those holidays, who would not love a delicious velvety muffin on those holidays? I sure do!

INGREDIENTS YOU NEED
Muffins:
- 2 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
- 2/3 cup cocoa powder sifted
- 1 cup brown sugar
- 1/4 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk of choice, preferably full fat or buttermilk
- 1/2 cup unsalted butter melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp red food coloring or however much it takes to get the red you want
Cream Cheese Filling:
- 6 oz cream cheese room temperature
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
Instructions To Make Red Velvet Muffins
- Preheat your oven to 350 degrees F and line a 12 muffin tin with muffin liners, set aside.
- In a medium sized bowl, whisk together your flour, cocoa powder, brown sugar, sugar, baking powder, baking soda, and salt.
- In a separate large bowl, whisk together your milk, butter, eggs, vanilla, and food coloring until combined. Mix in your flour mixture until just combined, do not overmix.
- Evenly divide your batter between the prepared muffin liners and bake for 18-20 minutes or until a toothpick inserted into the middle comes out almost clean. Allow the muffins to cool completely before making your filling.
Cream Cheese Filling:
- Once your muffins have cooled, use a tsp measure to scoop out 1 tsp of muffin out of the top middle of your muffins, set those scooped out parts aside.
- Make your filling by combining all of your ingredients into a bowl and whisking until smooth.
- Place 1 tsp of cream cheese filling in to each of your muffins, and top with that scooped out muffin top. Enjoy!
