Ingredients
  

  • 4 large eggs room temperature
  • 1 cup sugar
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large apples cored, peeled, and diced

Method
 

  1. Preheat your oven to 350 degrees F and line a 9 inch springform pan with parchment paper, set aside.
  2. In a large mixing bowl whisk your eggs for 2 minutes.
  3. Add your sugar and vanilla extract, beat again on high speed for another 10 minutes or until the mixture triples in size and forms thick and fluffy ribbons.
  4. Using a sifter, sift your flour, baking powder, and salt in 3 separate additions, folding with a spatula in between of each addition.
  5. Add ⅔ of your diced apples and gently fold them in.
  6. Transfer the batter into your prepared spring form and top with your remaining diced apples.
  7. Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in your pan for at least 10 minutes.
  9. Slide a thin knife around the edges to loosen the cake. Transfer the cake to a cool rack to cool completely. Top with powdered sugar if desired, slice and enjoy!
