- 4 large eggs room temperature
- 1 cup sugar
- 1 1/2 tsp vanilla extract
- 1 1/4 cups all purpose flour OR 1:1 gluten free flour with xanthan gum
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large apples cored, peeled, and diced
Instructions To Make Apple Sponge Cake
- Preheat your oven to 350 degrees F and line a 9 inch springform pan with parchment paper, set aside.
- In a large mixing bowl whisk your eggs for 2 minutes.
- Add your sugar and vanilla extract, beat again on high speed for another 10 minutes or until the mixture triples in size and forms thick and fluffy ribbons.
- Using a sifter, sift your flour, baking powder, and salt in 3 separate additions, folding with a spatula in between of each addition.
- Add ⅔ of your diced apples and gently fold them in.
- Transfer the batter into your prepared spring form and top with your remaining diced apples.
- Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in your pan for at least 10 minutes.
