Cake:
Frosting:
  • 1 cup unsalted butter
  • 1/2 cup cream cheese
  • 1/2 cup dulce de leche
  • 4 cups powdered sugar
Cake Filling:
  • 2 cups dulce de leche
  • 2 large bananas

Instructions To Make Banoffee Cake

Cake:
  1. Pre heat your oven to 350 degrees F. Spray 3 8-inch round cake pans with non stick spray, line the bottom with a parchment paper. Set aside.
  2. Mash your 2 bananas, set aside.
  3. Whisk together your flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  4. In the bowl of a stand mixer using a paddle attachment, or electric hand mixer, beat your butter, oil, sugar and brown sugar together for until fluffy.
  5. Add in your eggs one at a time, beating one egg until completely incorporated before adding the next egg. Mix in your vanilla extract.
  6. Add the mashed bananas. Mix to combine.
  7. Fold in half of your flour mixture. Followed by your milk. Mix until incorporated.
  8. Add in your remaining flour and mix until just combined, do not overmix.
  9. Divide the batter between your prepared pans and bake in the oven for about 25 minutes, or until a toothpick comes out almost clean.
  10. Allow your cakes to cook in the cake pan for at least 10 minutes and then transfer to a cooling rack. Allow your cakes to cool completely before frosting.
Frosting:
  1. Beat your butter and cream cheese until creamy and fluffy. Add the 1/2 cup of dulce de leche and beat for one minute.
  2. Add your powdered sugar to the bowl and mix until the powdered sugar is incorporated.
  3. Cut your 2 remaining bananas in thin slices. Place a cake layer on the serving plate.
  4. Place some of your frosting in a piping bag, or in a large baggie and cut one edge off.
  5. Pipe a ring of your frosting around the edges of your cake layer.
  6. Spread about 1/2 cup of dulce de leche in the center. Top with sliced bananas.
  7. Place another cake layer on top and do the same thing with this layer. Place your top cake layer on.
  8. Using your remaining frosting, frost the top and edges of your cake.
  9. Decorate as you like, enjoy!
