Method
Cake:
- Pre heat your oven to 350 degrees F. Spray 3 8-inch round cake pans with non stick spray, line the bottom with a parchment paper. Set aside.
- Mash your 2 bananas, set aside.
- Whisk together your flour, baking soda, baking powder, cinnamon, and salt. Set aside.
- In the bowl of a stand mixer using a paddle attachment, or electric hand mixer, beat your butter, oil, sugar and brown sugar together for until fluffy.
- Add in your eggs one at a time, beating one egg until completely incorporated before adding the next egg. Mix in your vanilla extract.
- Add the mashed bananas. Mix to combine.
- Fold in half of your flour mixture. Followed by your milk. Mix until incorporated.
- Add in your remaining flour and mix until just combined, do not overmix.
- Divide the batter between your prepared pans and bake in the oven for about 25 minutes, or until a toothpick comes out almost clean.
- Allow your cakes to cook in the cake pan for at least 10 minutes and then transfer to a cooling rack. Allow your cakes to cool completely before frosting.
Frosting:
- Beat your butter and cream cheese until creamy and fluffy. Add the 1/2 cup of dulce de leche and beat for one minute.
- Add your powdered sugar to the bowl and mix until the powdered sugar is incorporated.
- Cut your 2 remaining bananas in thin slices. Place a cake layer on the serving plate.
- Place some of your frosting in a piping bag, or in a large baggie and cut one edge off.
- Pipe a ring of your frosting around the edges of your cake layer.
- Spread about 1/2 cup of dulce de leche in the center. Top with sliced bananas.
- Place another cake layer on top and do the same thing with this layer. Place your top cake layer on.
- Using your remaining frosting, frost the top and edges of your cake.
- Decorate as you like, enjoy!
