Method
- Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper and set aside.
- In a large mixing bowl, cream together your butter, sugar, and brown sugar.
- Mix in your egg yolks, one at a time until just combined.
- Mix in your vanilla extract and eggnog.
- In a large separate bowl, whisk together your flour, baking powder, salt, nutmeg, and cinnamon.
- Mix your flour mix in to your butter mixture and mix until combined.
- Using a cookie scoop, scoop your cookie dough on to your prepared baking sheet. Ensure your cookies are placed at least 3 inches apart. Bake for 11-13 minutes.
Eggnog Frosting:
- Cream your butter using an electric mixer. Once smooth, add in your eggnog and continue to mix. Add in your cinnamon.
- One cup at a time, whisk in your powdered sugar until smooth.
- Once your cookies have completely cooled, frost your cookies and enjoy!
