Preheat your oven to 350 degrees F and grease and line a 8x4 inch loaf pan with parchment paper, set aside.
Cream together your butter and sugar until fluffy, about 3 minutes. Once fluffy, mix in your eggs one at a time until just incorporated.
In a separate bowl, whisk together your flour, baking powder, and salt.
Slowly pour your flour mixture into your butter mixture. Pour in your milk and vanilla extract, continue to mix until everything is just incorporated, do not overmix.
Fold in your chocolate chips.
Evenly pour your batter in to your prepared loaf pan and bake for 45-55 minutes, or until a toothpick inserted in to the middle comes out almost clean, there should just be a few crumbs on it.
Allow to cool for 10 minutes before transferring to a wire cooling rack. Once that is on your cooling rack make your topping.
In a microwave safe dish melt your chocolate chips and coconut oil in 30 second increments, stirring in between. Once completely melted and smooth evenly spread over top of your loaf. Slice and enjoy!
