Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, set aside.
In a mixing bowl using an electric mixer, cream together your butter, biscoff, and both sugars until fluffy.
Mix in your egg and vanilla extract.
Mix in your flour, salt, and baking soda.
Using a large cookie scoop, scoop your cookie batter on to your prepared baking sheet. Leave at least 3 inches in between each cookie.
Add 1 tsp of biscoff cookie butter to the top of each cookie dough ball.
Bake for 10-12 minutes. Allow to cool for at least 5 minutes before transferring to a cooling rack. Enjoy!
