  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper, set aside.
  2. In a large mixing bowl, whisk together your peanut butter, sugar, and brown sugar until smooth.
  3. Whisk in your egg, salt and vanilla until well incorporated.
  4. Roll your dough in to 1 inch balls and roll in granulated sugar. Place on your baking sheet. Ensure each cookie dough ball is at least 3 inches apart.
  5. Bake for 8-10 minutes, remove from your oven and immediately top with your chocolate kiss while the cookies are hot. Slightly pressing down. Allow to cool and enjoy!
