Ingredients
  

Crust:
Cheesecake:
  • 32 oz full fat cream cheese room temperature
  • 3/4 cup powdered sugar
  • 1/3 cup baileys irish cream
  • 12 oz white chocolate chips melted and room temperature
  • 4 oz semi sweet chocolate chips melted and room temperature
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup whipped topping ie; cool whip
Optional toppings:
  • melted chocolate
  • chocolate shavings
  • whipped cream

Method
 

Crust:
  1. Spray a 9 inch springform pan with non stick spray and line the bottom with parchment paper, set aside.
  2. In a bowl mix together your oreo crumbs and melted butter until combined.
  3. Evenly press in to the bottom of your prepared springform pan.
Cheesecake:
  1. In the bowl of a electric mixer, combine your cream cheese and powdered sugar and mix until smooth.
  2. Add in your baileys and mix until smooth.
  3. Mix in your melted white and semi sweet chocolate in a steady stream while the mixer is running on low speed, until completely incorporated. Scrape down the sides of the bowl as needed.
  4. Mix in your vanilla extract and salt.
  5. Fold in your whipped topping.
  6. Pour your cheesecake mixture on top of your crust and smooth the top with a rubber spatula.
  7. Place in your fridge to set for 6 hours or preferably overnight.
  8. When ready, remove from your fridge and place your toppings if you are using them. Slice and enjoy!
