Method
Crust:
- Spray a 9 inch springform pan with non stick spray and line the bottom with parchment paper, set aside.
- In a bowl mix together your oreo crumbs and melted butter until combined.
- Evenly press in to the bottom of your prepared springform pan.
Cheesecake:
- In the bowl of a electric mixer, combine your cream cheese and powdered sugar and mix until smooth.
- Add in your baileys and mix until smooth.
- Mix in your melted white and semi sweet chocolate in a steady stream while the mixer is running on low speed, until completely incorporated. Scrape down the sides of the bowl as needed.
- Mix in your vanilla extract and salt.
- Fold in your whipped topping.
- Pour your cheesecake mixture on top of your crust and smooth the top with a rubber spatula.
- Place in your fridge to set for 6 hours or preferably overnight.
- When ready, remove from your fridge and place your toppings if you are using them. Slice and enjoy!
