Ingredients
  

Crust:
Cheesecake:
  • 1 cup strawberries chopped
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • 16 oz cream cheese room temperature
  • 1/4 cup plain or vanilla greek yogurt
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 large egg

Method
 

  1. Preheat your oven to 350 degrees F and line an 8x8 baking dish with parchment paper, set aside.
Crust:
  1. In a bowl, mix together your graham cracker crumbs and melted butter until combined.
  2. Evenly spread your crust in to your prepared pan and press down to pack it.
Cheesecake:
  1. In a small saucepan, add your strawberries, sugar and lemon juice and bring them to a boil. Reduce your heat to a simmer and simmer for 5-10 minutes, using a wooden spoon to help break down the strawberries; set aside to cool.
  2. In a large mixing bowl, whisk together your cream cheese, greek yogurt, sugar, and vanilla extract until smooth.
  3. Mix in your egg until just combined.
  4. Evenly pour your cheesecake over top of your crust, then top with dollops of your strawberry mix. Swirl your strawberry mix in to the top of your cheesecake.
  5. Bake for 30-32 minutes and allow to cool to room temperature. Once cooled to room temperature, place in your fridge for at least two hours. Slice and enjoy!
