Method
 

Ice Cream:
  1. In a large bowl using an electric mixer, whisk your heavy cream until stiff peaks form.
  2. Pour in your condensed milk and vanilla extract and gently fold in until smooth. Do not over-mix! Scoop about a 3/4 cup of the vanilla ice cream into a separate small bowl and set aside.
  3. Puree your strawberries and mix them into your 3/4 cup of ice cream.
  4. Fill 2/3 of each place in your popsicle mold with your vanilla ice cream. Using a straw create a hole in the middle of your vanilla ice cream and fill with your strawberry ice cream. Top with remaining vanilla ice cream if you have some left.
  5. Put your popsicle stick in your popsicle and freeze for 24 hours.
Strawberry Crunch Coating:
  1. Crunch your golden oreos and place them in a bowl. Mix in your powdered jello mix.
  2. Place your white chocolate chips and coconut oil in a microwave safe dish and microwave for 30 second increments, stirring in between, until fully melted.
  3. Working one at a time, remove a popsicle from the mold and carefully dip your popsicle into the melted white chocolate until almost fully submerged.
  4. Quickly place popsicle on top of the strawberry shortbread coating and spoon over the small bits until the popsicle is fully covered on each side. Enjoy!
