INGREDIENTS YOU NEED
Ice Cream
- 1 cup heavy cream
- 7 oz sweetened condensed milk
- 1 tsp vanilla extract
- 6 oz fresh strawberries chopped
Strawberry Crunch Coating
- 8 oz white chocolate chips
- 2 tbsp coconut oil this will help the chocolate to harden and have a smooth consistency
- 20 golden oreos
- 3 oz strawberry jello powder
Instructions To Make Strawberry Shortcake Popsicle
Ice Cream:
- In a large bowl using an electric mixer, whisk your heavy cream until stiff peaks form.
- Pour in your condensed milk and vanilla extract and gently fold in until smooth. Do not over-mix! Scoop about a 3/4 cup of the vanilla ice cream into a separate small bowl and set aside.
- Puree your strawberries and mix them into your 3/4 cup of ice cream.
- Fill 2/3 of each place in your popsicle mold with your vanilla ice cream. Using a straw create a hole in the middle of your vanilla ice cream and fill with your strawberry ice cream. Top with remaining vanilla ice cream if you have some left.
- Put your popsicle stick in your popsicle and freeze for 24 hours.
Strawberry Crunch Coating
- Crunch your golden oreos and place them in a bowl. Mix in your powdered jello mix.
- Place your white chocolate chips and coconut oil in a microwave safe dish and microwave for 30 second increments, stirring in between, until fully melted.
- Working one at a time, remove a popsicle from the mold and carefully dip your popsicle into the melted white chocolate until almost fully submerged.
- Quickly place popsicle on top of the strawberry shortbread coating and spoon over the small bits until the popsicle is fully covered on each side. Enjoy!
