Ingredients
  

  • 5 tbsp unsalted butter
  • 4 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1 cup roasted salted peanuts
  • 1/2 cup swerve sugar replacement

Method
 

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a small pot, heat your butter, 3 tablespoon heavy cream, vanilla extract, and swerve, over medium-low heat until thickened and golden. About 10 minutes. Stirring constantly, this can burn quickly.
  3. Remove pot from the heat and add the remaining 1 tbsp of heavy cream. Stir until smooth. Stir in your peanuts. Pour onto the parchment-lined tray and refrigerate until set. Once set, break and enjoy!
