Delicious classic meringue cookies with a sugar free keto twist! All you need is four ingredients and one bowl to whip up these cookies.

I have always loved a meringue cookies, so of course I had to make a keto version! Growing up the grocery store always let kids pick out a free cookie while their parents shopped and I always picked out a meringue cookie. Of course, the version in the store had a bunch of fun colors. One tip that I do have for this recipe that is super important – make sure the bowl that you are using to make your cookies in is DRY! Not one drop of water, other wise the texture of your cookies will be off.

INGREDIENTS YOU NEED TO MAKE KETO MERINGUE COOKIES

  • 2 large egg whites room temperature
  • 1/4 tsp cream of tartar
  • 1/2 cup powdered monk fruit or powdered sweetener of choice
  • 1 tsp vanilla extract

Instructions To Make Keto Meringue Cookies

  1. Preheat your oven to 220 degrees F. Line a large baking sheet with parchment paper and set aside.
  2. Add your egg whites and beat together with an electric whisk until frothy. Add the cream of tartar and beat until soft peaks form. Add in your powdered sugar, one tablespoon at a time. Until stiff peaks form. Transfer the mixture into a piping bag with a star point tip attached.
  3. Pipe out tablespoon sized portions of the meringue onto your prepared baking sheet. Bake for 45 minutes.
  4. Turn the oven off and slightly open the oven door. Let the meringue cookies cool in there for an hour. After an hour, remove from the oven and let sit at room temperature until cooled. Enjoy!

  1. Samantha, have you ever tried making Keto Macarons? Just curious since you seem to have the meringue down pat…seems to follow that it would be pretty easy to make macarons adding granulated monk fruit, cream of tartar + almond flour after the meringue is made. 🤔 Curious to know what your thoughts are.
